I don't know about you, but I love ice cream. The creaminess, the coolness; it's almost magical in summer. The only thing I don't like is the calorie count! That got me thinking about how I could still enjoy my favorite treat without the calorie load. That's where this mango ice cream comes in.
This is a low-calorie twist on a delicious favorite! Using almond milk instead of cream drastically reduces the calories and still keeps it a little creamy. Substituting Splenda for sugar keeps it sweet and guilt-free. The cream cheese adds excellent texture and the mangoes bring the flavor! You absolutely must try it with coconut shavings on top!

You will need an ice cream maker for this recipe, but if you don't have one yet you can easily get one at your local big-box store or pick up this Nostalgia Ice Cream Maker on Amazon for less than $40 usually, or this Hamilton Beach model for even less.
How to make low-calorie mango ice cream
Mango Ice Cream
Ingredients
- 2 cups almond milk sweetened or unsweetened
- 8 oz fat free cream cheese softened
- 1 cup chopped mangos fresh or frozen
- ½ cup Splenda
- 1 teaspoon vanilla
- dash cinnamon
Instructions

Combine all ingredients in a large bowl. Pour into ice cream maker. Follow the manufacturer's instructions. Store in air-tight container in the freezer for at least 3 hours before eating.
