    Isn't it interesting how certain flavors or desserts just don't sound appealing at certain times of the year? Imagine serving gingerbread and pumpkin pie at a summer picnic or watermelon popsicles at a Christmas party. Some treats are just meant for certain seasons! With the weather getting more pleasant and summer is on the horizon, I'm craving cold and slightly messy desserts in creamy pretty colors, and you know what that means...ice cream! I decided to combine two of my latest favorite things, ice cream and donuts, into a cute little treat I call Neapolitan Donut Ice Cream Sandwiches!

    These can be as simple as you'd like. I always opt using for a donut maker to make things simple and quick, but you could save yourself even more time by using store-bought mini donuts. I even stick with the tried-and-true box of cake mix when I want to make these in bulk and I'm on a time crunch. To go with the Neapolitan theme, I chose to make up batches of chocolate, white, and strawberry donuts. Bake or fry up those cute little donuts and let them completely cool before you even think about adding ice cream.

    In fact, placing them in the freezer for about an hour (or even overnight) will help your sandwiches stay together much better. Meanwhile, melt your baking chocolate to a warm and creamy temperature. Once your donuts are cooled and firm, use a cookie scooper to get a perfect ball of ice cream in the middle of your coordinating flavor of donut.

    Take another donut and dip the top into melting chocolate, being careful to not get your fingers in the way. Flatten slightly with the donut top and serve immediately!

    These are absolutely perfect if you eat them just after assembled, as the ice cream gets soft and melty and the chocolate on top sets up nice and crunchy. Yum!

      I would probably cut the donut in half rather than stack them for easier eating! Especially for little ones!

      Ohhh now I must get a donut maker, yes, to make these, but for having tasty treats fast and easy. These look so delish, perfect for any occasion or just a snack for the fam!

      I just can't believe all the new yummy creative goodies that are available now!! Two of my favorites - donuts & icecream! Made into little ice cream sandwiches/bites.
      They would be great for a kid's party and not that messy either. Pinned!!
