Lately, I've really been focusing on getting enough fiber into my diet. It can be hard sometimes! One of the best tricks I've come across is to buy bread that comes packed with fiber. After trying out a few brands and incorporating just one sandwich from this bread into my diet each day, I've been able to reach almost HALF of my daily fiber needs in one light meal!
One of my favorite fiber-rich brands of bread is Dave's Killer Bread. It's readily available at Walmart, and super easy to find in the bread aisle. I like not having to shop at specialty stores to find it. It's also USDA Organic. I'm trying to cut out as many chemicals and preservatives from my family's diet as possible.
The 21 Whole Grains and Seeds bread is the wonder bread. I've really come to love this hearty nutty bread for all sorts of things like toast, lunch sandwiches, grilled cheese for dinner, and especially French toast. I was really excited to try it out in our latest favorite, a Lemon Ricotta Stuffed French Toast Recipe!
Lemon Ricotta Stuffed French Toast
The filling is what really makes this recipe memorable. Freshly-zested lemon rind incorporated with ricotta cheese and powdered sugar is an incredible combination!
Using the same lemon for its juice in the batter brings out even more of the lemon flavor, and using heavy cream instead of traditional milk makes this stuffed French toast recipe SO GOOD!
Get a load of all this goodness on the bottom of the 21 Whole Grains and Seeds variety! This bread has a delightful subtle sweetness and a fantastically hearty texture. It compliments the creaminess of the ricotta so well in this recipe.
Lemon Ricotta Stuffed French Toast
A delicious stuffed French toast with lots of delightful citrus flavor!
Ingredients
Filling
- 1 ½ cups ricotta cheese
- ½ cup powdered sugar
- 1 Tablespoon lemon zest
Batter
- 3 eggs large
- 1 Tablespoon lemon juice
- ¾ cup heavy cream
- pinch salt
- ½ teaspoon vanilla
- 12 slices Dave's Killer Bread
Extras
- 1 Tablespoon butter for the pan
- raspberries or strawberries
- powdered sugar
Instructions

Mix the three filling ingredients by hand until incorporated. Set aside.

Beat the eggs until fluffy, then add in the other ingredients until mixed and pour entire mixture into a shallow dish.

Scoop 2 heaping Tablespoons of filling onto one slice of bread. Top with another slice of bread.

Dip the sandwich in the batter until the bread is soaked (probably for 2-3 seconds), then turn it over and soak the other side.

Heat a skillet on medium, and let a Tablespoon of butter melt. Set the soaked sandwhich in the skillet and cook on both sides for 4-5 minutes or until lightly browned.

Serve with raspberries and powdered sugar.
This recipe is equally delicious when made with White Bread Done Right bread. I just had to try this recipe again, so here it is on white!

I LOVE Daves Bread!! I have never really found a bread that I liked until I found this brand. I haven't tried the white bread yet, but I am definitely going to get some the next time I go shopping! We love Dave’s bread but used Texas toast instead for this recipe! Also added an extra egg and used half & half (what I had on hand). So good! This is definitely a keeper - the whole family, including picky teens, loved it! Thank you!
