I've really come to love this hearty nutty bread for all sorts of things like toast, lunch sandwiches, grilled cheese for dinner, and especially French toast, so I was really excited to try it out in our latest favorite, a Lemon Ricotta Stuffed French Toast Recipe!
The filling is what really makes this recipe memorable. Freshly-zested lemon rind incorporated with ricotta cheese and powdered sugar is an incredible combination!
Using the same lemon for it's juice in the batter brings out even more of the lemon flavor, and using heavy cream instead of traditional milk makes this stuffed French toast recipe SO GOOD!

Lemon Ricotta Stuffed French Toast
A delicious stuffed French toast with lots of delightful citrus flavor!
- 1 ½ cups ricotta cheese
- ½ cup powdered sugar
- 1 Tablespoon lemon zest
- 3 eggs large
- 1 Tablespoon lemon juice
- ¾ cup heavy cream
- pinch salt
- ½ teaspoon vanilla
- 12 slices Dave's Killer Bread
- 1 Tablespoon butter for the pan
- raspberries or strawberries
- powdered sugar
Mix the three filling ingredients by hand until incorporated. Set aside.
Beat the eggs until fluffy, then add in the other ingredients until mixed and pour entire mixture into a shallow dish.
Scoop 2 heaping Tablespoons of filling onto one slice of bread. Top with another slice of bread.
Dip the sandwich in the batter until the bread is soaked (probably for 2-3 seconds), then turn it over and soak the other side.
Heat a skillet on medium, and let a Tablespoon of butter melt. Set the soaked sandwhich in the skillet and cook on both sides for 4-5 minutes or until lightly browned.
Serve with raspberries and powdered sugar.
This recipe is equally delicious made with the White Bread Done Right bread, and I just had to try this recipe again, so here it is on white!
