Crepe Cake Recipe
I love making special desserts around the holidays and this one takes the cake (see what I did there?!). This Crepe Cake recipe is super impressive to look at, but it's so amazingly tasty too!

Tis the season for the sweetest, most delicious treats you could possibly imagine! With all these get-togethers, holiday parties, and family togetherness, foodies near and far are drumming up their best recipes and in my case, trying to raise the bar and make them a little better than last year! I have a serious love affair with crepes, so when these breathtaking "crepe cakes" starting showing up on Pinterest, I wrote them down as something I needed to make as soon as possible...and then Eagle Brand introduced their new Limited Edition sweetened condensed milks! Put a fork in me! I knew this recipe was going to be an over-the-moon kind of win, and I was just beside myself when it all came together like I hoped it would.
These Caramel and Chocolate flavored sweetened condensed milks just scream "holidays" to me! Just like the holidays, however, they're only around for a short time, so when you find them, stock up. These are great for making shortcuts in recipes because there are less extra ingredients you need to add to your favorite recipes. The sweetened condensed milk is a specially dissolved blend of milk and sugar that is a foolproof base for all sorts of delicious things, and it eliminates the need for additional sugar in most recipes.
I know only a few recipes by heart and my crepes are one of them. For every egg, add 1 cup of flour and one cup of milk. Its as easy as that! Toss in a little vanilla and sugar if you're in the mood.
Crepes
Ingredients:
- 3 eggs
- 3 cups milk
- 3 cups flour
- 1 T. vanilla
- ¼ cup sugar
Directions:
Beat the eggs and milk in your mixer until creamy. Slowly add ¼ cup of flour at a time, mixing well between each addition. Consider sifting your flour into the bowl to avoid clumps. Add the vanilla and sugar at the end. Use a ¼ cup measuring cup to scoop out ¼ cup of batter and swirl it around a small saucepan on medium. After a minute, or when the sides look set up, flip it and cook an additional 20-30 seconds. Stack your finished crepes with a layer of wax paper in between to avoid sticking to each other as they cool.
I decided to alternate layers of crepe with chocolate mousse, and here is a recipe that is fast, totally easy, and absolutely delicious with the rich and creamy texture of the Eagle Brand Chocolate Flavored Sweetened Condensed Milk. My husband's favorite flavor/dessert of all time is chocolate mousse, and typically I'm spending a fair amount of time melting, chopping, and mixing my chocolate, but this single can of goodness eliminated all of that.
Chocolate Mousse
Ingredients:
- 1 cup cold water
- 1 (14 oz.) can Eagle Brand Chocolate Flavored Sweetened Condensed Milk
- 1 small box of instant chocolate pudding mix
- 1 cup heavy cream
- 1 T. cinnamon
Directions:
Mix the sweetened condensed milk with the cold water in your mixer until combined. Add the pudding mix and chill for 10 minutes while you whip the heavy cream into whipped cream. Fold the two mixtures together with the cinnamon and chill until needed.
This turns out so creamy, so rich, and totally delicious! The special ingredient is the cinnamon!! One Tablespoon might feel like a lot, and you can definitely taste the strong flavor, but it feels very appropriate paired with the fairly bland crepe.
Here's an interesting tip: Eagle Brand Sweetened Condensed Milks will thicken when combined with acidic fruit juice even without heat, so if you wanted to add some lemon juice to your milk, you could achieve a nice and thick velvety pudding or pie filling.
But back to our recipe: place your first crepe on your cake stand, plate, or whatever will be the final destination for your cake. Moving your cake after assembled is NOT going to be fun and I do not advise it. Layer the crepes and the mousse until its as tall as you dare!
Then add some garnish! Cranberries will really make this a Christmas cake, and turning them into festive sugared cranberries takes less than 5 minutes.
First, heat ½ cup sugar and ½ cup water in a saucepan over medium heat. Once the sugar is dissolved, remove from heat, stir in the cranberries, and make sure they're well coated. With a slotted spoon, transfer them to wax paper and let them dry for at least an hour.
From there, roll the berries in small batches in a bowl of sugar, then use a pasta spaghetti server spoon to scoop and shake out the excess sugar as you transfer to a different container. Oh how pretty they look on top!
And some pistachios and pomegranates, and if you REALLY want to make this amazing, whip up some to-die-for caramel sauce using the Eagle Brand Chocolate Flavored Sweetened Condensed Milk!
You probably already knew that you could make caramel sauce by heating up a can of regular sweetened condensed milk, but when you start with CARAMEL flavored sweetened condensed milk and add even MORE caramel candies, this is a glorified caramel sauce like you've never tasted. It is thick and it is dreamy. Pour it on top of your crepe cake slices like syrup and this is a brunchy dessert that no one will forget.
Caramel Sauce
Ingredients
- Eagle Brand Chocolate Flavored Sweetened Condensed Milk
- ½ cup milk chocolate chips
- 3 T. butter
- 3.75 oz. soft caramel candies
Directions
Combine everything in a saucepan and cook over Low-Medium heat until well combined, thick and creamy. Because Eagle Brand Sweetened Condensed Milk caramelizes evenly and easily, all you have to do is heat and stir!
So. Dang. Delicious. I thought this crepe cake was to die for. I made this in the morning and we ate some for breakfast, then I'm embarrassed to admit that I finished it off within the day. I couldn't help it! It was all of my favorite things, all layered so beautifully and oozing with holiday flavors! I'd mark this down as a major win, and I'll absolutely be making this again in the very near future.

Thank you, Amber!! It really was as easy as it looks. The thick layers did start to get a little slippery, so I'd recommend thinner mousse layers to keep it from toppling! YES make it for Christmas morning!!
