Are you ready for some delicious recipes to help keep you cool this summer? I am an official ambassador for DOLE® Fresh Fruit and Fresh Vegetables and I've got some pretty incredible recipes to share to keep "Powering the Hero Within," all inspired by Disney•Pixar’s Incredibles 2.
Ever since I visited DOLE Plantation in Hawaii, I've been obsessed with their pineapple. We had the most amazing pineapple ice cream while we were there and I'm not going to lie, I still dream about it. It was THAT good. Of course, being the good mom that I am, I want to share all of the DOLE goodness with my kids.
That's why I'm excited to partner with DOLE to help celebrate their new alliance with Disney•Pixar's Incredibles 2. As part of their "Powering the Hero Within" initiative, not only will you find your favorite Incredibles 2 characters featured on DOLE Bananas and Pineapples throughout North America, you can also explore a yummy range of Incredibles 2-inspired breakfast, entrée, snack and drink recipes and healthy eating tips on their new website.
On the site, you'll find a slew of Incredibles 2-themed recipes and nutritional information. You can even upload photos showing off your family's healthy eating style. For each photo uploaded between May 24th and September 15th, 2018, DOLE has committed to making a $2 donation to Action for Healthy Kids to support the national nonprofit organization’s work to build healthier families, communities, and schools. Action for Healthy Kids aims to make "Every kid healthy, active, and ready to learn," and I'm thrilled that DOLE is inspiring people to eat healthier and become a hero for those around them.
Ready to start eating more fruits and veggies and power your hero within? The recipes created by the DOLE Nutrition Institute (DNI) will help you do just that! Plus, there are even some holiday-themed recipes for Father's Day, like “Parr-fect Power-up Cup” inspired by Mr. Parr; the “Power Pop Breakfast Smoothie” and “Pineapple Frozen Fireworks” for Independence Day.
I decided to whip up a few of these recipes for our family and my kids specifically requested a few frozen treats. I was excited to give them some desserts that aren't filled with dyes and preservatives. We started with the Pineapple Frozen Fireworks and my daughter loved them so much that she ate 3 the very first time she tried them.
That was fine with me! Our homemade ice pop molds are pretty small so I guess it's time to upgrade her to the larger size molds. Plus, how could I say no to a face like this?!
Pineapple Ice Pops
A refreshing and healthier options this summer! These pineapple ice pops are a winner with kids and adults.
Ingredients
- 2 cups DOLE pineapple Peeled and flesh cut into cubes
- 1 cup Unsweetened almond milk
- 8 ounces Silken tofu
- 1 Lime (juice only)
- ½ cup Honey
Instructions

Place all the ingredients into a blender, and blend until smooth

Pour into ice pop molds and freeze until solid, then serve.

You can also make this recipe with DOLE Strawberries or DOLE Raspberries.
My son's favorite treats always involve chocolate, so we also made a batch of Frozen Banana Blast. With only 4 ingredients, this is a dessert that can feel good giving my kids.
This dessert is so easy to make and the most labor intensive part is cutting up the speckled bananas and freezing them! Once they're frozen you just pop them into a blender with some cocoa powder, almond milk and vanilla extract.
The result is an ice-cream-like dessert that is only 70 calories and SO good! We enjoyed ours right away and the consistency was just like soft-serve ice cream. I topped it off with some DOLE raspberries too!
Frozen Banana Blast
This faux-ice cream is dairy-free and super yummy!
Ingredients
- 3 large DOLE Bananas OVER-RIPE
- 3 tbsp unsweetened cocoa powder
- ⅓ cup unsweetened almond milk
- 1.5 tsp vanilla extract
Instructions

Slice bananas into coins and freeze until firm 1-3 hours or overnight.

Add all ingredients to food processor or strong blender. Pulse until combined and then blend until smooth, making sure sides are scraped 1-2 times to ensure ingredients are well combined and without lumps, approx. 4 to 5 minutes.

Enjoy right away as soft serve or store in freezer safe container for a “hard” ice cream.
