    toffee bar + chocolate chip

Disclosure: This is a sponsored recipe on behalf of Country Crock®. All opinions are 100% my own.

I'm so excited that the holiday season is here! 'Tis the season for baking and I plan on doing a ton of it this year. Between holiday parties, MOPS events, gift giving and cookies for Santa, we've got a lot of baking ahead of us. My 4-year-old is a mini chef in the making and has been begging to help me in the kitchen lately. To save myself a little time, I usually grab a box or bag of cookie mix, but not anymore. The Country Crock® Make It Yours™ Cookie Recipe is the perfect base cookie dough and it's so easy to whip up. Now, the hardest part of making cookies is deciding which mix-ins to use.

    toffee cookies

I've been craving toffee bars ever since I rummaged through my son's trick-or-treat bag, so I was looking for any excuse to buy some. Baking up a batch of delicious cookies for my sweeties was the perfect reason. What goes best with toffee bars you ask? Well, more chocolate of course.

    toffee chocolate chip mix ins

The combination of chocolate chips and toffee bars is simply splendid. Paired with the Country Crock® Make it Yours™ Cookie Recipe, this treat is a definite winner.

Toffee Bar + Chocolate Chip Make It Yours™Cookie Recipe!

    Course Cookies, Dessert
    Prep Time 10 minutes
    Cook Time 12 minutes
    Total Time 22 minutes
    Servings 4 dozen

    Ingredients

    • 1 cup Country Crock®
    • ¾ cup packed brown sugar
    • ¾ cup granulated sugar
    • 1 large egg
    • 1 large egg yolk
    • 2 tsp. vanilla extract
    • 3 cups all-purpose flour
    • 1 tsp. baking powder
    • ¾ tsp. salt
    • ¼ tsp. baking soda
    • 1 to 2 cups of your choice of mix-ins
    • 1 cup of crushed toffee bars
    • 1 cup of chocolate chips

    Instructions

    1. Preheat oven to 375°.
    2. Mix brown sugar, granulated sugar, Country Crock® spread, egg, egg yolk and vanilla into a large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended (dough will be soft and creamy).
    3. Add your crushed toffee bars and chocolate chips into the dough until every spoonful of dough has some of the delicious mix-ins.
    4. Drop dough by rounded tablespoonfuls onto ungreased baking sheets 3-inches apart. Bake 10 to 12 minutes until edges are lightly golden.
    5. Cool 1 minute on wire rack; remove from baking sheets and cool completely.

    toffee bar cookies

The possibilities are endless with this one easy cookie recipe. My son and I dreamed up quite a few favorite mix-in combinations. I'm fairly certain the Country Crock® Make it Yours™ cookie recipe is the only recipe you need this holiday. This is a total timesaver since you won't need to buy ingredients for dozens of recipes; you can just swap out mix-ins for totally new flavors. Stay tuned to see what else we'll be baking up this season!

What do you think about my mix-in choice?
Are you a toffee bar fan?
