My word, the holidays can get BUSY! It hasn't slowed down since Halloween, and it's not going to stop! I am easily attending at least one social gathering or holiday event every week where food is involved, and that is only bound to increase as Christmas grows even closer. I love the excuse it gives me to get fancy with the food creations, but then I am constantly hunting for the best dishes or containers around the house that will transport the food and still look classy on the table. A rusty pan or a dowdy dish can make your food look less appealing, and having it all fall apart by the time you get the party is no good at all. I heard of these party platters and party serving kits from Rubbermaid and thought they couldn't be more perfect for this time of year and for all of these events where I need to transport and serve appealing treats!

How convenient that I needed to make some cupcakes for a Thanksgiving church event last week! These were the perfect solution!
This Rubbermaid® Party Serving Kit is really getting out of the house quite a bit this season! Its just so handy for transporting all sorts of party foods like cupcakes, cookies, cakes, pies, casseroles, etc. because you can use it for the flat base or with either of the two inserts, made for standard-size cupcakes, mini cupcakes, and even deviled eggs. The interchangeable inserts make the kit so versatile and they nest neatly and securely inside so I don't worry about transporting and serving with style. The components are also 100% BPA free and dishwasher safe, and the kit stores away compactly with the inserts inside.
I just couldn't wait another minute to get started on some Thanksgiving-inspired cupcakes! I wanted to try making a sweet potato souffle in cupcake form with a little cranberry detail on top.
Sweet Potato Cupcakes
Ingredients:
- 2 eggs
- 1 ½ cups brown sugar
- 13 T. butter, softened at room temperature
- one large (40 oz.) can of yams in syrup (drained)
- ⅔ cup milk
- 3 t. vanilla
- 2 ½ cups flour
- 1 t. cinnamon
- 1 t. pumpkin pie spice
- 2 t. baking powder
- 1 t. baking soda
- ½ t. salt
Cream the eggs and sugar together until smooth. Beat in the soft butter, yams, milk, and vanilla. In a separate bowl, combine all the dry ingredients, then add everything together and mix for 1 minute. Drop into cupcake liners and cook at 350 degrees for 18-20 minutes.
Marshmallow Fluff Frosting
Ingredients:
- half of a large (16 oz.) jar of Marshmallow Fluff
- 2 sticks of butter, softened at room temperature
- ½ t. vanilla
- 4 cups powdered sugar
Combine everything in a mixer and beat on high for several minutes until well combined and creamy!
Oh, these are scrumptious! I make these with quite a bit more sweet potato than typical recipes for sweet potato cupcakes, but I think this only makes them moister (and healthier too!). These cranberries are also totally easy to make. You simply heat ½ cup of sugar and ½ cup of water in a saucepan over medium heat. Remove from heat when the sugar is dissolved, then stir in the cranberries until well coated. Transfer to wax paper with a slotted spoon and let them dry for at least an hour, then roll in sugar in small batches and scoop them out with a spaghetti server spoon.
Top your cute little cupcakes with one or two cranberries, or cover the entire top!
Then drop these little cups of goodness into your Rubbermaid® Party Serving Kit! There are 12 holes for cupcakes in the standard-sized cupcake insert, but I found that I could stack even more inside by placing more in between, and they felt completely secure. Besides using the Party Serving Kit to transport, it serves as the perfect storage container for keeping little fingers out of the frosting before the party starts. How lovely to not have to worry about these treasures drying out, tipping over in the trunk, or getting smashed by falling clutter.
Off we go to the party! Thanksgiving travel hasn't gotten me worried in the slightest, since I'll be able to transport anything from hors d'oeuvres to pies inside!
