    Nothing says holidays to me like Christmas cookies and these Red Velvet cookies that I whipped up with the Country Crock® Make It Yours™ recipe are so festive (and delicious!).

    If you saw my Toffee Bar + Chocolate Chip cookies, then you know I'm loving the Country Crock® Make It Yours™ Cookie Recipe. Country Crock® has created the perfect base cookie dough recipe and my family just can't get enough of it. Actually, my neighbors and friends can't either because we baked a huge batch of cookies and handed them out last week. Talk about spreading holiday cheer! Well, I've got another variation of this versatile recipe that I want to share and I think it just screams holiday. Say hello to my Red Velvet Make It Yours™ cookies.

    I wouldn't normally choose white chocolate over milk chocolate when it comes to dessert, but I just love the flavor combinations in this red velvet cookie recipe. They are simply divine!

    The Country Crock® Make It Yours™ Cookie Recipe is so simple, yet perfect. I've said it before and I really think this is the only cookie recipe you'll need this holiday season. Just swap out the mix-ins and the sky is the limit.

    I completely transformed the base dough just by adding a few key ingredients: cocoa powder, red food coloring, and white chocolate chips.

    The white chocolate chips have a tendency to sink into the dough, so I like to reserve a handful or two to sprinkle on top just before baking.

    Red Velvet Cookies Recipe

    Red Velvet Make It Yours Cookie Recipe!

    Prep Time 10 minutes
    Cook Time 12 minutes
    Total Time 22 minutes

    Ingredients

    • Ingredients:
    • 1 cup Country Crock®
    • ¾ cup packed brown sugar
    • ¾ cup granulated sugar
    • 1 large egg
    • 1 large egg yolk
    • 2 tsp. vanilla extract
    • 3 cups all-purpose flour
    • 1 tsp. baking powder
    • ¾ tsp. salt
    • ¼ tsp. baking soda
    • 1.5 cups white chocolate chips plus a few handfuls to add to the top before baking, if desired
    • 1 tbsp. Cocoa Powder
    • Red food dye - I used the gel kind and ended up using about ½ the jar. If you're using liquid just keep adding drops slowly until you get your desired shade of red.

    Instructions

    1. Preheat oven to 375°.
    2. Mix brown sugar, granulated sugar, Country Crock® spread, egg, egg yolk and vanilla into a large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended (dough will be soft and creamy).
    3. Add your cocoa powder, red food coloring, and white chocolate chips into the dough until every spoonful of dough has some of the delicious mix-ins and the dye has been fully incorporated.
    4. Drop dough by rounded tablespoonfuls onto ungreased baking sheets 3-inches apart. Bake 10 to 12 minutes until edges are lightly golden.
    5. Cool 1 minute on wire rack; remove from baking sheets and cool completely.

We loved the toffee bars + chocolate chips we added last time so we'll definitely be making those again, and these Red Velvet cookies are going to look exquisite on our holiday table this year. My 4-and-½ year old helped me make this batch of cookies and he insists that we leave some of these out for Santa this year. I know Santa is really going to love them!

      I really love the taste of red velvet cake I bet the cookies are good too. I think I would make a batch with and without chips and froost the ones with no chips. They look delicious!
