Rich Chocolate Raspberry Cake Recipe
Say the word "mayonnaise" at a brunch or social dinner, and you might get some curious glares. Its not often a word you hear when you're talking about fine dishes or sweets, but Hellmann's has a new product that is so creamy and pure, you'd never guess it was the secret ingredient in my dreamy chocolate raspberry cake. This decadent chocolate cake is rich and it's perfectly paired with delicious raspberry icing.

It takes over an hour to get to my closest Target, but I was totally willing to make the drive because I knew I could get everything I needed for my recipe while I was there, including the very specific freeze-dried raspberries I needed for the frosting. I picked up all the ingredients I needed in a jiffy and still had time for a "shelfie" with my new favorite jar of Hellmann's!
I know you're dying to see how this chocolate raspberry cake was made possible. Here's what I used along with my Hellmann's Carefully Crafted!
What you need:
2 cups bread flour
⅔ cups cocoa
1 t. baking soda
½ t. baking powder
1 t. cinnamon
3 eggs
1 ½ cups sugar
1 t. vanilla
1 cup Hellmann's Carefully Crafted Dressing & Sandwich Spread
1 cup water
½ cup dark chocolate chips
Rich Chocolate Raspberry Cake Recipe
Ingredients
- 3 eggs
- 1 ½ cups sugar
- 1 t. vanilla
- 1 cup Hellmann's Carefully Crafted Dressing & Sandwich Spread
- 1 cup water
- ½ cup dark chocolate chips
- 2 cups bread flour
- ⅔ cups cocoa
- 1 t. baking soda
- ½ t. baking powder
- 1 t. cinnamon
Instructions

Cream the eggs and the sugar until smooth and creamy.

Add in the vanilla and Hellmann's Carefully Crafted Dressing & Sandwich Spread until combined.

Warm the chocolate chips for 30 seconds at a time in the microwave until melted and stir it into the wet ingredients bowl.

Combine the dry ingredients in a separate bowl.

Add it to the wet ingredients in small amounts along with the water until smooth.

Bake in greased round pans for 35-40 minutes at 350 degrees.
Bake the batter in a greased round pan at 350 degrees for 35-40 min for a delightful cake! Here's how to make the tangy, sweet raspberry frosting:
Ingredients:
1 cup butter
3-4 cups powdered sugar
1 T. lemon juice
1.25 oz freeze-dried raspberries
Cream the butter and powdered sugar in your mixture until creamy, then crunch the freeze-dried raspberries until fine. Mix in into the bowl along with the lemon juice, adding more powdered sugar to get a thicker consistency. Spread it on your round and top with berries and more chocolate chips!
Doesn't this make a delightful treat? And who would have guessed it was made with Hellmann's!? I gave out some slices to my friends in my neighborhood, and none of them came close to guessing the secret ingredient. One of my friends who absolutely detests mayonnaise and salad dressings was completely floored by how well it was hidden in the recipe because she loved the cake so much.
