With back to school season in full swing, it's not uncommon for me to be exhausted and flustered come dinner time. Thankfully, I've found a simple solution for busy weeknight meals and I've partnered with Gorton's Seafood to tell you all about it.
Who knew that having a first grader and a preschooler would mean that I'm running around all day long. I had grand visions of having free time and reading books while drinking lattes when school started again, but boy was I wrong! Between school drop-offs and pick-ups, piano practice, T-ball, Awana, birthday parties, and playdates, I am simply frazzled most days. I'd like to tell you that I'm the best meal planner in the world and that my kids eat homemade meals every single night, but that would be a lie.
Busy weeknight meals
Some days I'm completely wrapped up in housework, helping with phonics homework and shuttling small humans to and from after-school activities. It's on those days that I allow myself a little grace. Instead of overwhelming myself even more with to-dos and timers, I opt for quick and convenient meals. That's exactly why I love Gorton's Shrimp Bowls.
With Gorton's Shrimp Bowls, you're getting an indulgent, feels-like-fine-dining meal that's cooked to perfection in under 6 minutes. Dinner in less than 6 minutes. Isn't that music to your ears? I'm especially thankful for these quick meals when we've got T-ball practice from 5:30 to 6:30, which means we don't get home until almost 7 PM. We've got an 8 o'clock bedtime around here so that doesn't leave me much time to serve my kids a good meal, get them showered and into that bedtime routine. Gorton's Shrimp Bowls are a lifesaver on days like these.
I love the pops of color that the vegetables deliver. I know we eat with our eyes first and I have to say, Gorton's has done a fantastic job here. These bowls are superbly seasoned and taste as good as they look. My kids gobble up the Stir Fry with Soba Noodles Shrimp Bowl. My daughter's favorite food just happens to be edamame (seriously, she could eat an entire order by herself), so she often goes for those first.
My favorite is the Black Garlic & Wine Risotto Shrimp Bowl. The consistency of the risotto and the shrimp is perfection! The hint of parmesan cheese adds just the right touch.
To top it all off, there are NO DISHES to clean after dinner! Just cook and serve your Shrimp Bowl and that's it. There's no saute pans to scrub or plates to wash. It's a busy parent's dream come true and it's actually cheaper than take-out or fast food.
So, do you have any go-to weeknight meals?
I'd love to hear about them!
