I've heard that the most delicious and desirable foods in all of the world's cuisine are those that combine opposite flavors, even if in just small amounts. It's by including both the sour with the sweet, or the sweet with the savory, that the best recipes are born, and while we can't put a finger on exactly why we love it so much, our palettes are totally pleased! We love to marry different flavors in our Crock-Pot® slow cooker when they can simmer for hours and combine so beautifully! I grew up in a home where Mexican food was served practically every other night during the school year, so it only feels appropriate that I make my family something festive on a regular basis now that we have school age children. These Sweet and Savory Slow Cooker Fajitas are exactly what everyone wants to come together for after a long day of classes, work, errands, and busy weekday life!
Sweet and Savory Slow Cooker Fajitas
The ingredient list is really quite simple, and everything can easily be found at any grocery store.
Ingredients:
- 2.5 lbs. of chicken breast
- 3 colorful peppers
- one sweet onion
- ½ cup fajita seasoning
- 1 cup light or dark brown sugar
- 1 cup of water
- 3 limes
Begin by slicing your peppers into thin strips after cutting off the tops and the white insides.
Slice up your onion and cut the chicken breasts into long thin strips, then arrange everything in your Crock-Pot® slow cooker by color, or simply throw everything in at once! Ahh, the beauty of slow cookers!
Crumble the brown sugar over the top of the vegetables and chicken, then combine the water with the fajita seasoning and pour that on as well. Lastly, squeeze the juice out of three limes with a juicer into the pot.
Cover your slow cooker and set it on low for three hours. This is where I absolutely LOVE my Crock-Pot® Programmable Lift & Serve Hinged Lid 6-Quart Oval Slow Cooker. What sets this Crock-Pot® slow cooker apart from others I've had in the past is that this one is programmable! I don't have to stress over being home in time to turn off the cooker so that the food doesn't dry up or overcook because I can set the number of hours I'd like it to cook, and then it automatically reverts to the "Warm" setting. The automated smart cook settings and multi-method cooking options have really made this one of my must-have tools in the kitchen, and I feel like it is absolutely essential for busy families.
After an hour or so of cooking, lift up the lid and stir the ingredients around a bit so that the chicken pieces can cook thoroughly.
The detachable lid that lifts and lowers on a hinge is excellent for recipes that involve some checking, stirring, or occasional add-ins along the cooking process.
Everything should be nice and tender after three hours, but I image another hour cooking on Low would be perfectly fine, too. With the precision heat technology, I know everything will be cooked evenly and thoroughly. This recipe provides just the right amount of sweet juices to marinate the chicken and vegetables and creates not just a meal, but something memorable! I feel like the possibilities are really endless with Crock-Pot® brand, and because throwing in add-ins and impromptu ingredients is all part of the cooking experience, every recipe turns out a little unique. You could try all sorts of things with this fajita recipe by adding in more flavors and spices that suit you.
Glorious! The marriage of lime and sweet onion is so delightful. Add to that the sweetness of the brown sugar and the saltiness in the seasonings, and you've got one addicting meal on your table.
Gather up your favorite fajita toppings, like Monterrey jack cheese, cilantro, avocado, tomatoes, and sour cream...
...and start loading them up!
I like to scoop the sour cream into a plastic bag, clip a small hole in the corner, and spread it like frosting. You could even thin it out with a little milk if you'd like it to spread more like a dressing.
The chopped cilantro on top is the crowning touch! These are going to fly off your table. I've made these twice this week and we're already looking forward to the next occasion!
It would be easy to interchange the meat in this fajita recipe. Feel free to get creative by using steak or even shrimp!
