What's the perfect addition to all kinds of Mexican dishes? Mexican Slaw! I whipped up a batch of this crunchy slaw and I'm never going back to simply shredded lettuce again.
A few weeks ago, my husband whipped us these amazing Chicken Adobo Tacos and IÂ remembered having a similar dish at a restaurant once that was topped with crisp and crunchy Mexican cabbage slaw. For some reason, I had a bag of cabbage on hand and IÂ quickly whipped up a batch to along with our adobo chicken. It was good, but it was even better the next day once it had more time to marinate and absorb all of those wonderfully acidic flavors.
I'd encourage you to make this Mexican slaw up the night before your meal and store it in the fridge. Otherwise, try to make it in the morning and then refrigerate it. Give it plenty of time to soak up all of that lime juice and spice!
Fresh lime juice really kicks up the flavor a notch, but if you only have the bottled kind, by all means use it. When paired with the sweet honey and carrots, the flavors of cumin, coriander, and paprika, are just dynamite.
Mexican Slaw
Top your favorite Mexican dishes with his Mexican slaw. This cabbage slaw is packed with flavor!
Ingredients
- ½ head Cabbage shredded
- 2 Carrots shredded
- 2 tbsp Olive oil
- ¼ cup Lime Juice
- 1 tbsp Honey
- 1 tsp Salt Add more or less to taste
- 1 tsp Pepper Add more or less to taste
- 1 tsp Paprika
- 1 tsp Coriander
- 1 tbsp Cumin
Instructions

Combine all ingredients in a bowl and let sit for several hours if possible. It's actually better the next day.
