Daytona Beach is famous for Bike Week in the spring and Biketoberfest in the fall. If you aren't familiar with these events, it's when motorcycle enthusiasts come together to enjoy the Florida weather, scenery, and bars and restaurants. For us locals, it means an uptick in traffic, but it also means it's time for steak tips at The World Famous Iron Horse Saloon. What is Snake River Farms?
Snake River Farms is based in Boise, Idaho, and was the brainchild of Agri Beef founder Robert Rebholtz Sr. They'd been in the cattle industry for 20 years when they adopted the first Wagyu cattle program in 1988. Later, they renamed the operation Snake River Farms. Unwilling to simply produce the same product as everyone else, they created an entirely new breed by breeding Wagyu with high-quality Angus cattle. The results were rich flavor beef with sublime marbling and they've been mastering that amazing combination ever since. By 1998, Agri Beef received the Cattle Business of the Century award. As you can see, they know some things about American Wagyu beef.

What's in a Snake River Farms box?
The delivery was expertly packaged and included a reusable cooler bag that was filled with dry ice and ice packs. Every item was still frozen when I opened the box.

I've been craving steak tips for ages so I went right for the Snake River Farms American Wagyu Tenderloin Pieces. The 1-pound package consists of random-sized, high-quality trimmings that remain from when they trim filet mignon steaks. I knew they'd be perfect for creating a savory, flavorful steak and potatoes dish that would be an elevated, cleaner version of steak tips.
Steak Bites with Garlic Butter and Potatoes ingredients:
- Snake River Farms American Wagyu Tenderloin Pieces
- Small gold potatoes
- 4 tbsp Grass-fed butter
- 3-4 cloves of garlic, minced
- Rosemary (fresh), minced
- Parsley (fresh), minced
- Salt and pepper to taste
Steak Bites with Garlic Butter and Potatoes instructions:
Rinse your potatoes and cut them into uniform-sized pieces. Since we're preparing this dish on the stovetop, you'll want to soften the potatoes ahead of time to reduce cooking time. Add them to a microwave-safe bowl with ½ cup of water and cook on high for 5-10 minutes until they're almost fork-tender. Be sure to check them at the 5-minute mark and then every few minutes afterward. My microwave cooks slowly, so it took almost a full 10 minutes for my potatoes to cook. If you don't have a microwave, use your stovetop to boil or steam them. Check their tenderness at about 5 minutes or so and then every minute afterward until they're fork-tender.
Next, heat a large skillet over "medium-ish" heat and melt 2 tbsp of grass-fed butter. I say medium-ish because I've got a gas range that runs extremely hot so I cook most things on low or simmer. Once your butter is melted, add your fork-tender potatoes and give them a healthy sprinkling of salt and pepper. Let them sit for a few minutes to brown, then stir, then cook another 5 minutes or so until potatoes are browned. Remove the potatoes into a covered bowl to keep them warm.
In the same pan, melt your remaining 2 tbsp of butter on medium-high heat and add your garlic and herbs. Add your pieces of steak (making sure they're uniform in size) and season with salt and pepper to taste. Sear on one side for about 2 minutes. Then, turn each piece and cook for an additional 2 minutes.
Return the potatoes to the pan and stir to combine once the steak has cooked. Serve right away and garnish with additional parsley if you'd like.
The flavor of this simple dish is outstanding. Serve it alongside a fresh green salad or a side of broccoli or Brussel sprouts for a well-balanced meal.
