Ever since Mickey from A Helicopter Mom challenged me to create a yummy cookie recipe using the Country Crock® Make It Yours™ Cookie Recipe, I've been baking up a storm. Her Chocolate and Butterscotch Chip Cookie recipe looks great. And I'm so confident in my toffee bar + chocolate chip recipe that I'm baking up big batches as gifts for our neighbors and school friends.
What I love most about the Country Crock® Make It Yours™ Cookie Recipe is how easy it is to make. I usually have the base cookie dough recipe ingredients on hand, so all I have to do is figure out how creative I want to get with my 1-2 cups of mix-ins. In my toffee bar + chocolate chip cookie recipe, the creamy goodness of the Country Crock® spread truly shines through and blends with the mix-ins perfectly.
Toffee Bar and Chocolate Chip Cookie Recipe
Ingredients:
1 cup Country Crock®
¾ cup packed brown sugar
¾ cup granulated sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking powder
¾ tsp. salt
¼ tsp. baking soda
1 cup of crushed toffee bars
1 cup of chocolate chips
Instructions:
Preheat oven to 375°.
Mix brown sugar, granulated sugar, Country Crock® spread, egg, egg yolk and vanilla into a large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended (dough will be soft and creamy).
Add your crushed toffee bars and chocolate chips into the dough until every spoonful of dough has some of the delicious mix-ins.
Drop dough by rounded tablespoonfuls onto ungreased baking sheets 3-inches apart.
Bake 10 to 12 minutes until edges are lightly golden.
Cool 1 minute on wire rack; remove from baking sheets and cool completely.

We are most definitely cookie family. We have three common cookie bases 8n our almost at all times. Chocolate, Regular Chocolate chip, and peanut butter. I have never seen a recipe that uses margarine or country crock before so this will be a delicious experiment.
