Caramel Apple Oatmeal Cream Pies are a seasonal and delightful treat using a super grain: oats! We're excited to be celebrating "Oatober" with this soft and creamy cookie recipe!
I get really excited about oatmeal! I eat it for breakfast nearly every other day, my children beg for it for snacks, and I'm always throwing oats into my baking experiments. I know this superfood provides good nutrition and essential energy, and Old Fashioned Quaker Oats are my first choice because 140 years of expertise has been poured into making them the highest quality oats possible. I love the large flakes and traditional taste of Quaker Oats, but the texture of these Old Fashioned oats is just perfection.
We celebrated "Oatober" with these soft and creamy cookie desserts! The cookies are chock full of apples and oats, and the caramel cream cheese in the middle makes them irresistible.
Caramel Apple Oatmeal Cookie Ingredients:
- 1 ½ cups flour
- ½ t. salt
- 1 t. baking soda
- 2 t. cinnamon
- 2 sticks (1 cup) softened salted butter
- 1 cup dark brown sugar
- 2 eggs
- 2 t. vanilla
- 3 cups Old Fashioned Quaker Oats
- 2 cups freeze dried apples
Combine the flour, salt, baking soda and cinnamon in a bowl and set aside. Beat together the softened butter and brown sugar in a mixer for 3 minutes. Add in the eggs and vanilla and beat fully for 1 minute more. Combine the two mixtures along with the oats and freeze dried apples. Chill for one hour, then scoop onto a wax paper-lined pan and bake for 12-15 min. at 350°. Cool for 5 minutes on the pan then transfer to a wire rack to cook completely.
Caramel Cream Cheese Ingredients:
- 2 sticks (one cup) softened salted butter
- ½ block (or 4 oz) of cream cheese
- ½ cup thick caramel sauce
- 2 t. vanilla
- 4 cups powdered sugar
Beat butter in mixer until creamy. Add in the next three ingredients and beat until completely mixed. Gradually add in the powdered sugar either by hand or in a mixer with a lid. Beat on high until fluffy (about 2 minutes). Spoon into a frosting bag and pipe it onto a cookie and top it with another. Be sure to watch our video below to see how it's done!
