Fall is pretty much my favorite time of year. The cooler weather, the festive holidays, the food - need I say more?! I've teamed up with Mirum Shopper to share a fall favorite with you, Autumn Corn Chowder.
My son just loves helping in the kitchen lately. I bought him his own little chef hat and apron so he'd look the part while helping us prepare dinner and he's been eating it up. Not only is he learning some important life skills, but he's also more willing to try new foods when he gets to handle them and help cook them. That is HUGE for this picky eater. I feel like I'm totally winning in the mom department lately because of it. One thing that he's always been resistant to try is corn. Don't ask me why since he devours corn bread and corn dogs, but actual corn kernels is a definite "no" for him. That's why I was excited to prepare an Autumn Corn Chowder with him.
What I love about this Autumn Corn Chowder recipe is that it includes a lot of ingredients my kids don't normally eat (like butternut squash and leeks), but that I love. Since it's a chowder it kind of camouflages them in a yummy, hearty meal. Also, since my kids are in the mix it's an entire experience for our family, not just a meal.
To get cooking, we head to Target to gather our ingredients. Anytime I can buy fresh produce, household items, and my entire wardrobe in one place, I feel pretty good about life. For these recipes, we stocked up on Knorr products (and there's a great deal on them at Target - just scroll down to see), then got to work. I love spending time with my little guy in the kitchen, and saving money on the products we need at Target is just the icing on the cake.
This recipe is full of colorful vegetables and flavor. It screams Autumn and is perfect for warming you up at the end of a chilly day.
Here's how we make Autumn Corn Chowder
Autumn Corn Chowder
Ingredients
- 2 slices reduced sodium bacon optional - my son is not a fan so we skipped this
- ½ cup leek finely chopped, white parts only
- 10 ounces peeled butternut squash finely chopped
- 2 stalks celery finely chopped
- 2 cups fresh corn or thawed frozen corn
- 8 cups water
- 1 tub Knorr® Homestyle Stock - Reduced Sodium Chicken
- 1 package Knorr® Rice Sides™ - Chicken flavor
Instructions

Cook bacon in large saucepot until crisp, about 5 minutes. Remove bacon from saucepot. Set aside and reserve drippings. If not using bacon, obviously skip this step.

Cook leek, squash, celery and corn in reserved drippings over medium heat, stirring occasionally, until vegetables are tender, about 5 minutes. Add water and bring to boil then reduce heat to medium low and cook 10 minutes. Remove 2 cups of broth and vegetables and set aside.

Stir in Knorr® Homestyle Stock - Reduced Sodium Chicken and Knorr® Rice Sides™ - Chicken flavor. Cover and cook 7 minutes or until rice is tender.

Meanwhile, process reserved 2 cups broth and vegetables in blender until smooth; stir into saucepot and cook until heated through. Garnish, if desired, with fresh parsley.
Recipe Notes
TIP: Nothing beats fresh vegetables - but frozen or canned vegetables save time and can be just as nutritious. Look for no added sugar, fat or salt varieties.

OOh, that looks so good. I love using Knorr rice sides for meals. I like to take the Mexican rice and mix in cooked chicken, black beans, corn and shredded Mexican cheese blend. It is so good. The cheese melts and turns the sauce super creamy! Yummy

This is something I would enjoy. I love butternut squash and it really keeps well so you can have it on hand. I love the taste of this squash, and I think this would be a great winter time warm up.
