Pomegranate pie is amazing! We're sharing one of our favorite recipes for this delicious dessert, an Apple Blueberry Pomegranate Pie Recipe.
Tis the season to get baking!! I can bet that you find yourself in the kitchen more now than in any other season, and isn't it fun to cook up holiday favorites?! With Thanksgiving approaching, I've been anticipating pie-baking season, especially since I have family coming to town that I'd like to impress. I have a tried-and-true apple pie recipe that I used when I was a TA in cooking class at college, but the equipment I have is a little less than tried-and-true. It was time to update the pie-making supplies in my kitchen, and I knew just who to turn to! I've been familiar with HIC (Harold Import Company) for a couple years now, and I love their Mrs. Anderson brand. At no cost to facilitate this review, I was sent a box of everything I needed to whip up a Thanksgiving-table-worthy pie.

Here are just seven of their products, though they have a vast array of useful items for all your cooking needs. I'm excited to show these to you in action and guide you along my favorite pomegranate pie recipe.
Apple Blueberry Pomegranate Pie Recipe
Ingredients:2 C. flour½ t. salt⅔ C. shortening6-8 T. ice cold water
Next up, the Mrs. Anderson's Pastry Mat is a pie-maker's best friend! I can't believe I've been make pies without one! It really creates the ideal working surface for creating perfectly round dough, from pies to pizza and other crusts. Using the circular guidelines, you can work your dough into a perfect sphere while being able to lift and flour your substance easily.
It measures 18" by 24", so you've really got a good area of work space, and there are helpful measurement charts in the top corners. Just make sure you do not put the mat in the dishwasher. Wash with soap and warm water. The next tool is also a keeper. This is the Double Dough Roller, and it really helps you control the pie crusts being rolled in a uniform manner. It has a 4" roller and a 2.5" roller, which is great for smoothing edges and for using within a pan, like when you're rolling pizza dough into the pizza pan where a full-size roller wouldn't fit. I like having this roller around because it is perfect for little helpers to use!
Your flexible working surface is also transportable now, which can be handy if you're fighting for counter space on hectic holiday baking days. Just gently lift, or even bring the mat close and peel it away, then place the bottom crust inside your beautiful pie pan!
This is the Mrs. Anderson's "Easy As Pie" Pie Plate and this thing is SOLID! It has a 10" diameter and 2" depth and is made of ceramic. The scalloped rim is PERFECT for pies with ornamented crusts because it is wide and has some texture. I'm so impressed with the weight and the glossy surface! This will be great for hefty casseroles and deep dish desserts too.
Ok, now you can start working on your filling!
Filling ingredients:
6 C. apples
¾ C. packed brown sugar
2 T. flour
¼ t. ground nutmeg
½ t. cinnamon
⅛ t. salt
2 T. margarine, cut up
This Apple Corer is going to be a life saver! Not just for pie making, I've been using this weapon on an every day basis. We really go through the apples for lunches around here, and this method of coring and sectioning the apple takes seconds. It has stainless steel blades that chop easily and efficiently, but what I love most are the silicone comfort-grip handles. In one motion, it creates eight even slices, and the cleanup is minimal. Just toss the core and rinse with warm, soapy water.
Combine all the filling ingredients in a large bowl. This Measuring Spoon Set is perfect for all these small amounts of ingredients, and the silicone texture is fun! I like how each spoon is a different color so that when you're hunting for the right size, you can just look for the color and not bother with reading the small engraved numbers.
Here's where I varied from my tried-and-true recipe. This year, I added a sprinkle of sliced almonds and a handful of frozen blueberries!
Also new this year: pomegranates! These are the seeds from half of one large pomegranate. I love the bright color it adds! Mix it all up and dump into your bottom pie crust. As you can see, it doesn't much matter how the edges looks right now. As longs as there is some crust going up onto the rim for the top to rest on, you're good.
You could go ahead and cook it from here if you wanted! This sure looks like Fall to me.
Ok, remember that second ball of dough left lonely? Now you can roll out your second dough ball to make the top details. I rolled it in the same circular fashion and pulled out these Mrs. Anderson's Leaf Cookie Cutters! They are detailed, sharp, and the perfect size for small cookies or pie cutouts! I LOVE the cute circular dish they come in, and how the pieces fit together like a puzzle for compact storage. I think they will make the most adorable cookies!
I cut out a small design in the middle then lifted it onto your filled pie. If the crust cracks, try to mend it with some milk and some pressing by hand. If you don't want to cut anything out, consider making slits of some sort to create a vent.
To incorporate a little color on cutouts, you can paint them with egg yolks! One drop of food coloring mixed with part of an egg yolk makes a gorgeous and vibrant glaze! I split one egg yolk among three bowls and had plenty of extra "paint".
Carefully arrange them on your pie rim with a little milk underneath to act as a sort of glue.
From here, you can brush a small amount of milk onto the unpainted top crust and sprinkle with granulated sugar to help get a textured glaze.
Ok, preheat your oven to 425°. I like to wrap my pies in a circular foil rim so the edges don't burn, and bake for 35 minutes. Take off the foil and bake for another 10 - 15 minutes.
Clearly, the last 15 minutes in the oven without the foil proved a little too long and this pie came out a little crispy on the edges. I admit, I wasn't watching it closely. Little Brother needed a bath. Still, I think it will get eaten.

WOW! I'm Impressed! That's a nice looking pie! Just like the kind you purchase out! I make pies all the time, however, I've never put a top layer of pie crust on top, I always use crumbs on the top. I have a rolling pin and pie plates to use but none of that other fancy stuff which you received. I probably could make a pie with a top like that using my Christmas Cookie Cutters! I may just have to try it! We don't go anywhere for Christmas. We stay home and the kids will be playing w/whatever I get and I'll be online here and hubby will be sleeping on the couch. It's been this way since 2006! So, I'll be making a fancy pie for just us. Anyway, thanks for the recipe and showing us how you made your wonderful pie! I truly do appreciate it!
