    Football season is in full swing! If you love hosting tailgating parties and getting people together for the games, here is your inspiration for the next potluck item! Pull out your Crock-Pot® slow cooker and enjoy this new and extremely tasty twist on your standard nachos: Slow Cooker Buffalo Chicken Nachos!

    Some of our first dates as an engaged couple were to the BYU football games, and now that our boys are old enough to enjoy watching them with us at home, we are really enjoying football season like never before! I've been trying new dishes and game-day treats every weekend and we all look forward to it all week. Lately I've been obsessing over anything "buffalo" flavored, and I think I can track it back to my roots, growing up with healthy amounts of hot sauce on almost anything. I was enthusiastically determined to create a Crock-Pot® slow cooker dish that fused buffalo chicken with a football favorite (nachos), and I'm delighted at how this recipe turned out!

    For this Slow Cooker Buffalo Chicken Nachos recipe you will need:

    • 3 lb. chicken breast tenders
    • 2 cups blue cheese dressing
    • 1 ½ cups ranch dressing
    • 1 ¼ cups buffalo wing sauce
    • 3 T. hot sauce
    • 8 oz. cream cheese
    • 1-2 bags of blue corn chips

    Toppings:

    • 12 slices of thick sliced bacon
    • green onions
    • 4 roma tomatoes
    • ½ lb. blue cheese crumbles
    • 3 cups fancy shredded mozzarella cheese

    Begin by layering your chicken tenders in the bottom of your Crock-Pot® slow cooker. Pour on the dressings and the wing sauce, and place the cream cheese block in the center. (The video below will show you just how easy this is!)

    I've found that 3 hours on Low is a good amount of time, but if you are using full-size thick chicken breasts, you probably want to add an extra hour or two. I absolutely love my Crock-Pot® Programmable Lift & Serve Hinged Lid 6-Quart Oval Slow Clooker because I can set it to the time I'd like, and then it automatically switches to the Warm setting after that. I don't have to worry about the food burning if I can't get to it right away. I also find the hinged lid to be totally helpful as I'm going through the next steps of taking the chicken out and in again. It's so helpful not having to find a place to put a steamy lid when the counter is already full of ingredients and cooking tools. If you use your Crock-Pot® slow cooker frequently, or if you'd like to see for yourself how a programmable hinged-lid slow cooker can improve your cooking experience, I'd definitely recommend this one!

    Pull out the cooked chicken with some tongs and loosely shred it with two forks. You don't want to pulverize the chicken. The chicken will already be so tender that just stirring it around will break up the larger pieces for you. Put the shredded chicken back in the slow cooker while you prepare the rest of the toppings.

    This recipe will easily serve 8-10 people. One bunch of green onions, four roma tomatoes, and 12 slices of thick cut bacon should be just about right, but the amount of each topping can vary greatly if you like one thing more than another.

    Blue corn chips are the perfect color contrast, plus I feel like these are less likely to quickly become soggy under the saucy chicken. First, add the fancy shredded mozzarella, then the blue cheese crumbles, followed by the diced tomatoes and sliced green onions.

    Your guests will "ooo" and "ahh" over all the colors and just wait until you have them try the chicken!! It is packed with SO much flavor! You can really open up a whole new world of cooking possibilities with a Crock-Pot® slow cooker and I really couldn't be more thrilled with this new nacho recipe. It is spicy and strong and full of classic American flavors like buffalo and ranch.

    I've found that this recipe reheats very well. With extra buffalo chicken mixture on your hands, you can simply refrigerate it and warm up smaller servings at a time. Top it with some fresh toppings and you've got a winning dish to enjoy for a few nights even after the game!
