    lasagna recipe

I've teamed up with Lunchbox to share this lasagna recipe.

One thing I'm glad we did before we had kids was travel. My husband and I checked one BIG item off of our bucket list when we traveled to Italy for our Honeymoon. We spent a glorious 2 weeks traveling throughout Italy, with stops in Rome, Cinque Terre, Florence, Tuscany, and Pisa. While each spot was fascinating in its own right, one of the most memorable parts of the trip was having a family style dinner with fellow travelers at the B&B we were staying at in Tuscany. The rolling hillsides that served as our backdrop were just as picturesque as you can imagine and the food and fellowship was amazing. We met people from many different countries and tried several new food and wines. It was such a memorable experience.

    bertolli at the table

We've done a lot of experimenting with Italian cuisine since we returned from our Honeymoon, and recreating some of the dishes we had in Italy is one of our favorite pastimes. We're still perfecting our risotto recipe, but thankfully we can check lasagna off the list. We whipped up this Luscious Rosa Lasagna recipe (on a weeknight!) from Bertolli and were so happy to have a little slice of Tuscany at our table.

    Here's how to make it:

    bertolli lasagna ingredients

Prep time: 20 minutes, Cook times 1 hr. Yields 8 servings.

    Ingredients:
2 containers (15 ounces each) ricotta cheese
    2 cups shredded mozzarella cheese
    ½ cup grated Parmesan cheese
    2 eggs
1 jar Bertolli Tomato & Basil Sauce
    1 jar Bertolli Alfredo Sauce
12 lasagna noodles, cooked and drained

    Directions:
Preheat oven to 375 degrees F.
Combine ricotta cheese, mozzarella cheese, ¼ cup Parmesan cheese and eggs in large bowl; set aside.
    Combine sauces in medium bowl.
Spread 1 cup sauce mixture in 13 x 9-inch baking dish.
Layer 4 lasagna noodles, then 1 cup sauce mixture and ½ of the ricotta mixture; repeat.
Top with remaining 4 noodles, then sauce mixture and remaining ¼ cup Parmesan cheese.
Cover with aluminum foil and bake 50 minutes.
Remove foil and bake until bubbling, about 10 minutes.
Let stand 10 minutes before serving.
