    This is the new girl, Camille! I'm ECSTATIC to be blogging here on Viva Veltoro. I'm thrilled to be bringing you fun ideas, recipes, and projects every week, starting with this oh-so-appropriately-timed Easter cake! Without further ado, here is my recipe for Happy Easter Egg Cake !

    Now, I love spending an afternoon on something delicious, but usually I'm a little pressed for time, especially around any holiday. I tend towards recipes that are still beautiful and detailed, but that also can be made in less than an hour. This Happy Easter Egg Cake is definitely one of those.

    Starting with a cake mix saves you SO much time, and when you can find these for roughly a dollar, I find its usually totally worth it. You could probably find everything you need for this in your cupboard and fridge.

    One box of cake mix divided in two rounds makes a decently sized cake. Make according to directions, or add a little almond extract for fun. While the cake is baking, you can focus on the frosting. I used a tub of whipped cream and a cup of powdered sugar to thicken it up and make it go further. I like how this makes a very sweet frosting that is still somewhat light and fluffy and looks just like Marshmallow Fluff.

    You can do a quick and 'sloppy' frosting job by laying it on thick and saving yourself some time by not worrying about how smooth it looks. Start by making a hexagon of pretzels and building upon that by fanning them out and poking them into the cake.

    Then sprinkle some almonds and a handful of malted milk candy eggs, and you've got yourself an easy and festive Easter dessert!

    Cake Ingredients:

    1 yellow cake mix

    ⅓ cup oil

    1 cup water

    3 eggs

    Bake according to directions on box.

    Frosting Ingredients:

    1 tub of whipped cream

    1 cup powdered sugar

    Whip together until creamy.

    ...

    Toppings:

    a handful of pretzel sticks

    malted milk candy eggs

    slivered almonds

      This looks amazing! I would use the cadburys eggs though, i guess there isn't much difference but i love british chocolate!

      I must have missed this one for Easter. This is more for the older kids & adults instead of a bunny one.

      This cake looks so yummy. I would make it for other times too, just change the topping. You can use slivers of chocolate or M &Ms or such plain coconut. Easy to make it seems thanks for the recipe.
