Beef stroganoff is a classic dish. The recipe has undergone many transformations over the years. It's now a staple comfort food in households around the country. Here's my simple ground beef stroganoff recipe that I've tweaked to be dairy-free. Don't worry, you won't miss the dairy!
What is beef stroganoff?
Beef stroganoff is a classic Russian dish of sautéed beef that's traditionally served in a sauce of mustard and sour cream. The recipe has undergone many tweaks since it's inception in the mid 1800's.
The first known recipe for beef stroganoff was found in 1871. The recipe called for beef cubes prepared in a dry marinade of salt and allspice, sauteed in butter. The sauce was a classic roux with prepared mustard and broth. They finished the sauce with a bit of sour cream. There were no mushrooms or onions like you'll see in many of the recipes from today.
Over the years, many ingredients have changed. Especially the cuts of meats and seasonings. Meat can be cut into strips, diced, cubed, or ground. People began adding mushrooms, tomato paste, onions, and bottled marinades Worcestershire sauce to make it their own.
Beef Stroganoff Ingredients
In the United States, beef stroganoff usually contains beef filet with a mushroom, onion, and sour cream sauce. The dish is then served over rice or twisted egg noodles.
The best part about making your own stroganoff is that you can include whatever you like best. I don't enjoy mushrooms so I don't add them to my sauce. If you don't like onions, just skip them.
I wanted to use ground beef for my stroganoff for a few reasons. First, it's faster and easier to cook with. Second, my kids are more likely to eat ground beef over larger cuts or strips of beef. Third, it's tasty. I've been using Snake River Farms American Wagyu beef and it's absolutely delicious. I'd highly recommend it.
As I mentioned, I don't include mushrooms. I also make my roux a little different than I do for my chicken and biscuit pot pie. I also make this dish dairy-free.
Dairy-Free Beef Stroganoff
Sour cream is an essential part of this recipe because it gives the sauce such a unique flavor. Since dairy usually does not agree with me, I always have dairy-free alternatives on hand. I'm so happy that these products are becoming more "mainstream" and are more widely available. For this dish, I used Tofutti Sour Cream. It's a dairy-free, vegan sour cream that you can substitute 1:1.
I love this dish over egg noodles, but you can also serve it over rice. Mashed potatoes would be a good base too.
Ground Beef Stroganoff
A dairy-free version of a staple! This ground beef stroganoff recipe is easy and fast!
Ingredients
- 1 lb Ground beef
- 2 tbsp Butter
- 2 tbsp Olive oil
- ½ medium Onion Chopped
- 3 cloves Garlic Minced
- 1 tbsp Paprika
- 1.5 cups Beef broth
- 1.5 tbsp Worcestershire sauce
- 2 tbsp Flour
- ½ cup Sour cream {dairy-free}
- 1-2 tbsp Parsley for garnish Finely chopped
- 12 oz Egg noodles Prepared via bag instructions
Instructions

Using a large, non-stick pan, melt butter over medium heat. Once melted, add onions and garlic. Cook for 5 minutes, stirring frequently until onions are turning translucent.

While the onions and garlic cook, pour broth and Worcestershire into a measuring cup or bowl. Gradually whisk in the flour. Be sure there are no lumps. Set this mixture to the side.

Move the onion and garlic to the edges of the pan. Add olive oil. When hot, add the ground beef. Stir and crumble beef and mix onions/garlic Cook until meat is browned, about 7-8 minutes..

Add paprika. Salt and pepper to taste.

Add broth mixture to the pan and bring it to a simmer. Reduce heat if needed and simmer, uncovered, for 2-3 minutes until thickened.

Remove the pan from the heat and stir in sour cream. To avoid curdling, be sure the pan is off the burner.

Taste for salt and pepper before serving.

Serve over cooked egg noodles and garnish with parsley.
