    Garlic Shrimp Risotto Recipe!

    Making meaningful meals served up with more family time is not an easy task on busy weeknights, but Knorr Selects at BJ's have given us lots of ideas on creating satisfying meals that don't take all afternoon in the kitchen. One of our favorites is this recipe for Garlic Shrimp Risotto!

    I often think about how one of the biggest differences between life with kids and life without kids has everything to do with time. I still had schedules, deadlines, and obligations before kids, but I felt unlimited. I could cut and paste where I needed to and carve into my sleep hours when I needed to. "Limited" is sometimes the best way to describe how I feel about life with kids. I love my life exponentially more now, but I feel like there are major "this-or-that" decisions to make. Choosing to get the laundry done, clean the house, exercise, prep for dinner, or spend time with kids is often and unfortunately a "pick one" kind of deal with the time left in the day. There is also always an approaching dinner hour that cannot be pushed back a few hours. When juggling weeknight priorities, sometimes a nice and healthy dinner is sacrificed for something not so nice and not so healthy just because of the prep time needed. If you've ever struggled with these same thoughts, you've probably looked into meal starters that help to take out some of the prep time involved, but have you tried Knorr Selects at BJ's?

    I've hesitated to use meal packets in the past because the meals they created were unsubstantial, less than delicious, and full of artificial flavors and preservatives. None of these are an issue with Knorr Selects. While you still get a meal that is quick and easy to produce, you also get a gluten free meal that is filling, full of flavor, and void of artificial flavors or preservatives.

    Garlic Shrimp Risotto Recipe

    For this Garlic Shrimp Risotto Recipe, you will need:

    • 3 T. olive oil, divided
    • 1 lb. large uncooked shrimp, peeled and deveined
    • 1 clove garlic, chopped
    • 1 ½ cups water
    • 1 cup milk
    • 1 package Knorr Selects Four Cheese Risotto
    • 3 cups baby kale
    • 1 cup heirloom cherry tomatoes or cherry tomatoes

    Notice all the authentic ingredients, and how the ingredient list is not lengthy or exotic. Also, this Garlic Shrimp Risotto recipe has only THREE steps!

    Step One:

    Heat 1 T. olive oil in a large nonstick pan over medium heat. Season shrimp with salt and pepper if desired. Add shrimp and cook for about 3 min. until they turn pink, stirring in garlic during last 30 seconds. Remove from pan and set aside.

    Step Two:

    Pour the water, milk, remaining olive oil and Knorr Selects into the same pan. Bring to a boil, then reduce heat to medium and continue cooking for 7 min. Toss in the kale and cook 3 min. more.

    Step 3:

    Stir in your shrimp and tomatoes and serve!

    Like most Knorr Selects recipes, another beautiful thing about this risotto is that is requires only one pan, so you even spend time on clean-up.

    What I have here is a high quality product that I would feel comfortable serving to my family, my in-laws, or any other dinner guests of mine. I can stand behind the real ingredients in Knorr Rice Selects

    If I were to give a dash of helpful advice to busy moms on weeknights, it would be to decide immediately after lunch what will be on the menu for dinner and prep a few things right away. I like to set up the pans and the non-refrigerated items as early as possible so that there isn't a scramble to decide what's for dinner when it's crunch time. Prep what you can so that if other things take away your time in the late afternoon, you'll still be ahead of the dinner game.

    Whip up some Garlic Shrimp Risotto tonight! Start with Knorr Rice Selects and you'll end up with a delicious family meal, much like these other recipes using Knorr products. Be sure to find these and other Knorr products at your BJ's store!

      This looks like a really good and tasty recipe. I had pinned this to my Dinner Meals. Although I would substitute the rice package and buy some brown rice from my local Trader Joe's store. I just hate having to buy bagged rice like that in stores they have so much sodium. I'm antsy about that, but overall that looks DELISH! I can't wait to try it.
