I've teamed up with Lunchbox to bring you this creamy shrimp pasta in tomato garlic sauce recipe.
Throwing dinner parties is something I have loved doing since I was little. In Elementary School, I remember inviting my neighborhood girl friends to my garage to have snacks at our card table. For my 16th birthday, I had over a dozen of my best friends to enjoy a spaghetti dinner in our living room, all set up with lights and decor to look like a restaurant, while my brothers were the waiters! Now that I'm a grown-up, I still think there is nothing quite like gathering with friends and family around a home-cooked Italian meal, especially one that is rich in flavor and zest. I wanted to make something spectacular for some guests last weekend, so I used Bertolli to create a recipe for a Creamy Shrimp Pasta in Tomato Garlic Sauce, and it turned out even better than I could have imagined! Here is everything you're going to need for this recipe:
Ingredients:
2 T. olive oil (not pictured)
3-4 cups mushrooms, sliced
2 T. minced garlic
1 medium onion
¾ cup heavy cream
16 oz. cooked shrimp
½ t. ground red pepper
1 jar Bertolli Garlic & Alfredo sauce
1 jar Bertolli Tomato & Basil sauce
2 T. lemon juice
1 cup spinach
2 cups shredded mozzarella cheese
16 oz. fettuccine noodles
½ cup grated Parmesan cheese
The two VERY key ingredients are the Bertolli Tomato & Basil sauce and the Bertolli Garlic Alfredo Sauce. The two of them blended together with a few more spices and vegetables make a winning dish that is almost too good for words.
Directions:
Heat up the olive oil in a large saucepan or wok. Add the garlic, chopped onion, and mushrooms and cook until soft. Add the Bertolli sauce jars, heavy cream, and ground red pepper and stir until well combined. De-shell the shrimp and add to the pan. In another skillet, cook the spinach in the lemon juice for a few minutes on medium heat, then add to the creamy mixture, along with the mozzarella cheese. Stir until combined and creamy. Serve over fettuccine noodles and top with Parmesan cheese.
While the meal was cooking, I got to work transforming our kitchen into a little Italian restaurant! I started with these indoor/outdoor globe string lights and draped them to swoop over the table a few times. I hung them with adhesive hooks on the walls, which made them non-permanent and adjustable, and the whole thing worked perfectly! I was so pleased with the romantic and special effect it contributed to our dinner party!
The other decorations I pulled in included a jute table runner with fringed edges, white linen cloth napkins, and skinny breadsticks in wine glasses.
Loafs of Tuscan bread and baguettes make great fillers for the table, along with bamboo cutting boards with cheeses and grapes. Don't forget a big vase of giant sunflowers!
Now let's focus on this pasta! My guests LOVED it! They were adamant about getting the recipe! I loved being able to tell them how easy it was to put together, and how Bertolli sauces are at the heart of it. They commented on how it was remarkably flavorful and really liked the subtle spiciness, which came from the ground red pepper. If you make this recipe (and I totally recommend it!), I'd suggest sticking with the 71/90 size shrimp -- they were perfectly sized next to the mushrooms. I thought the fettuccine was an excellent choice for the pasta, but make sure you put some salt in the boiling pot so the noodles don't stick together like mine did.
Since Bertolli is steeped in Italian heritage, when you bring Bertolli to the table, you're also bringing the heart of Tuscany, so time spent with friends and family and an Italian recipe is even more enjoyable.
The night could not have been more perfect, and it was simply a delight to take my dinner party to Tuscany with Bertolli! The food was divine and the time spent together was memorable. Even the kids enjoyed the evening at our in-home 'restaurant'!
