Every year my family hosts an annual cookie bake where everyone comes with their favorite cookie recipes and we whip up dozens of varieties of treats for Christmas gifting and holiday parties. Maybe I'm a sucker for punishment, but this year I decided to do a trial of gluten free during December. It wasn't always easy, but I didn't gain a pound during the holidays (score!). I also didn't get to enjoy any of the cookies that we baked during the party... except for these amazingly yummy Chocolate Peanut Butter Balls. My friend Ana brought the recipe with her from up North and she graciously allowed me to share it with you. These naturally gluten free chocolate covered peanut butter treats were so popular that we had to make a second batch before Christmas.
Since there's no baking involved, these are really great to make with your kids. They'll love rolling the little balls to help you prep them for dipping. I know what you're thinking - what is paraffin wax and why am I using it? It's the same wax that's used in canning (so you should be able to find it in the baking aisle or the canning section of your grocery store) and yes, you're going to use up to half a stick (you could get away with ¼ I think). It makes the chocolate coating super shiny and allows it to dry firmly and super quick.
No Bake Chocolate Peanut Butter Balls Recipe
Ingredients
- 18 oz. jar peanut butter
- 1 lb. confectioner’s sugar
- 1 stick margarine melted
- 3 c. Rice Krispies
- ½ stick paraffin wax
- 12 oz. package chocolate morsels
Instructions

) Mix first 4 ingredients together.

) Roll into small balls and place on waxed paper covered cookie sheets.

) Refrigerate 1 hour.

) Melt chocolate and wax together in top of double boiler.

) Dip balls into chocolate mixture. Cool on waxed paper covered trays.

Thanks for the fun recipe. Just a heads up if you're handing out treats to anyone with a severe gluten sensitivity or with Celiac. Name brand Rice Crispies are not gluten free because they contain malt. Crazy, eh?! Maybe Kellogg's will go the way of Chex and Cheerios and come out with a true gluten-free version. Some other versions of crisped rice cereal are gluten free (though more spendy) and should have the same effect. I've usually seen these made with crushed up graham crackers, and finding gluten-free rice crispies-like cereal is way easier than finding decent gluten-free graham crackers!
