I've teamed up with Lunchbox for this berry apricot smoothie recipe.
Now more than ever I'm aware of the impact that my diet has on my looks. In my teens and twenties, I could get away with eating not-such-optimal food and still looking decent. These days I need a little extra help, so I try to eat right and use products that I know will give me good results. Thankfully, Publix is stocked with Allure-winning beauty products from brands that I love and trust like Clear, Dove and St. Ives. I combine them with healthy foods to create a beauty regimen that benefits me from the inside and out.
One of my very favorite beauty items is St. Ives Apricot Scrub and that's what gave me the inspiration for my latest smoothie idea. You know I love a good smoothie, and ever since I got my Blendtec blender, I've been whipping them up almost daily. They are such a refreshing way to begin my morning, and it really sets the tone for me to eat well throughout the day. Normally, I blend up a Berry Banana Smoothie, but I've been wanting to try something new, and that's when I walked by the apricots while shopping for my favorite scrub.
Apricots are full of beta-carotene, Vitamin C, antioxidants (which protect against free radical damage), and fiber. I just knew I wanted to incorporate this beautiful little fruit into my diet. I played around with a few versions of a smoothie and eventually settled on a berry apricot smoothie (see full recipe and instructions below). I chose to use a frozen berry blend and fresh apricots, but you could also use canned apricots as well. Fruit juices are usually my liquid base of choice for smoothies, but I wanted to add a bit more protein so I opted for almond milk instead since I just love its flavor. Plus, that makes this smoothie dairy free.
To sweeten this smoothie a bit, I like to add a few tablespoons of honey. Use local honey if you have it, otherwise the store bought kind is good too. If you don't have honey, you could use some sugar or a sugar substitute.
If you have a high-powered blender, like my trusty Blendtec, you can leave the skins on your apricots. Just cut them in half and remove the pit and you'll be good to go.
You'll end up with a gorgeous smoothie that's full of healthy ingredients!
Berry Apricot Smoothie
Ingredients
- 1 to 1.5 cups of frozen berries you can use a blend or any kind you like
- 2 apricots pitted
- 1 cup of almond milk
- 2 tablespoons honey more or less to taste
- ½ to 1 cup of ice cubes
Instructions

Add all ingredients to blend (frozen ingredients first, then fresh, then liquids) and blend for 30 seconds until smooth. Enjoy!
Pair this smoothie with St. Ives Apricot Scrub for a glowing complexion!

this looks and sounds delicious. i have family that has an apricot tree that lets us come get some every year. i usually dehydrate them for snacks but i think i'm going to have to save a few to make this.

Yum! I have had apricots in my freezer for a while now, not knowing what to do with them. I loved this smoothie but had to tweak it a little.
I only had lite coconut milk in the pantry, 1cup of that instead of almond milk. Had cranberry cubes that I made from straight cranberry juice, not from concentrate, instead of just regular ice. Added flax meal for some creamy texture as well as chia seeds. DE-lish!
Will definitely make this again and happy to know how to clean out the frozen apricots, but I believe this one will be a recurring smoothie in our house!

Oh! Almost forgot! Since I used vanilla protein powder too, I didn't need to add the honey/sweetener!
