Savory Chicken Stir Fry

Your whole family will love this chicken stir fry made with fresh vegetables, rice noodles, and a delicious sauce!

Ingredients

  • 2 tbsp Olive Oil
  • 2 lbs Chicken Breasts
  • ½ tsp Salt
  • 8 oz Rice Noodles (or zoodles)
  • 1 head Broccoli
  • 1 Zucchini
  • 1 Red Pepper
  • 1 Orange Pepper
  • 1 Yellow Pepper
  • 8 oz Mushrooms
  • Stir Fry Sauce (instructions below)
  • 1 tbsp Sesame Seeds

Stir Fry Sauce

  • 1 cup Liquid Coconut Aminos
  • ½ cup Chicken Broth (or vegetable broth)
  • ½ tbsp Toasted Sesame Oil
  • 2 tbsp Oyster Sauce
  • 1 tsp Ground Ginger
  • 1 tbsp Cornstarch

Instructions

  1. Start boiling water for the rice noodles. When water comes to a boil, put rice noodles in and boil for 4-6 minutes or until tender. Drain rice noodles.

  2. Meanwhile, heat 2 tbsp olive oil in fry pan. Cut chicken into thin slices, add salt, and cook in olive oil until white. While the chicken is cooking, cut up all of the vegetables into thin slices. 

  3. Once chicken is fully cooked, add vegetables to the frying pan and cook for 6-8 minutes or until they're at your desired softness. 

  4. While vegetables are cooking, mix together stir fry sauce ingredients. When the vegetables are cooked, add the stir fry sauce to the frying pan and bring to a boil.

  5. Reduce heat to low and simmer for about five minutes. Serve stir fry over rice noodles and top with sesame seeds if desired.

Recipe Notes

When possible, always buy organic ingredients. We use liquid coconut aminos rather than soy sauce because of the much lower sodium content but you could also use soy sauce. For a healthier meal, replace rice noodles with zoodles!
