Chicken with White Wine Butter Sauce

A delicious, tender chicken dish with a white wine butter sauce.

Ingredients

  • 4 chicken breasts (butterflied to make 8 pieces)
  • 1.5 cups seasoned Italian breadcrumbs
  • 0.5 cup grated Parmesan/ Asiago / Romano cheese blend could use just Parmesan if preferred
  • 1.5 tbsp garlic powder use more or less to taste
  • 1.5 sticks butter
  • 0.5 cup dry white wine
  • 0.25 cups fresh parsley chopped
  • 0.33 cups green onions chopped

Instructions

  1. Preheat oven to 350 degrees

  2. Butterfly chicken breasts and pound them out so they're thin and tender. 

  3. Melt butter.

  4. Mix seasoned Italian bread crumbs, grated cheese, and garlic powder in a bowl or plate. 

  5. Dip pieces of chicken in butter, then coat them with bread crumb mixture. Lay them on a rimmed cookie sheet or in a baking dish. 

  6. Set aside leftover butter while you put the chicken in the oven. 

  7. Add dry white wine, chopped green onions, and fresh parsley to the butter and let it simmer on very low heat while chicken cooks. 

  8. Allow chicken to cook for 30 minutes or until they're golden brown, then pour the butter and wine mixture over the chicken and bake for an additional 10 minutes.
