Bacon Jalapeno Poppers

A perfectly creamy and spicy appetizer.

Ingredients

  • 8 ounces cream cheese
  • 1 ½ cups pepper jack cheese
  • ½ cup Parmesan cheese
  • ½ cup green onions sliced
  • 10 slices bacon cooked
  • 12 wonton wrappers
  • 8 jalapeno peppers
  • 2 Tbsp shredded cheddar cheese
  • 2 Tbsp feta cheese

Instructions

  1. Place wonton wrappers into muffin tins and bake at 350 degrees for 8 minutes or until lightly browned.

  2. Cook bacon in a skillet until slightly crunchy and slice into small strips.

  3. Combine the cream cheese, pepper jack cheese, Parmesan cheese, and green onions in a bowl.  Set aside.

  4. Cut five of the jalapeno peppers in half and scoop out the seeds.  These peppers will be filled with the cheese filling.  Chop the remaining three jalapeno peppers into cubes and add to the creamy filling.

  5. Fill the wonton wrappers and sliced jalapeño peppers with the cheese filling and top with bacon.

  6. Bake at 350 degrees for another 8-10 minutes, but watch carefully so that the wonton wrappers do not become too browned.

  7. Add a sprinkle of shredded cheddar cheese and feta cheese on top.

  8. Serve with sour cream.
