Black Bean and Quinoa Salad Recipe

Ingredients

  • 1 cup fresh or frozen corn kernels
  • 1 can 15 oz. black beans, rinsed and drained
  • 1 cup cooked quinoa
  • 1 avocado chopped
  • ½ cup chopped red onion
  • ½ cup chopped fresh cilantro
  • ¼ cup Hellmann’s® or Best Foods® Vegan Carefully Crafted Dressing and Sandwich Spread
  • 1 Tbsp. fresh lime juice
  • ½ tsp. hot pepper sauce

Instructions

  1. Cook corn in large nonstick skillet over medium-high heat, stirring occasionally, until lightly toasted, about 3 minutes.
  2. Combine corn with remaining ingredients in large bowl.
  3. Serve chilled or at room temperature.
